Materials needed
Ingredients:
- 1 x 310g can whole kernel corn
- 2 eggs
- a pich of salt and pepper
- 1/2 cup plain flour
- 1 teaspoon baking powder
- 1/4 cup grated cheese
- 25g butter
- 2 tablespoons oil
Procedure:
- Drain the corn and discard the liquid.
- Put eggs, salt and pepper in a bowl. Beat well.
- Add flour and baking powder.
- Whisk until smooth.
- Add drained corn and grated cheese. Stir well.
- Put butter and oil in a frying pan.
- Heat until bubbly.
- Drop spoonful of the mixture in the frying pan.
- When golden turn over and cook the other side.
- Drain and lay on absorbent paper.
- The corn fritters are ready to be served.
